Ovenbaked Root Vegetables
Date & Tomato Chutney is perfect as a dressing/ cold sauce for meat and poultry.
Ingredients:
(4- 6 servings) 750 g mixed root vegetables - sweet potatoes - carrots - parsnip - flatleaf parsley - celery root 50 ml Date & Tomato Chutney (Rainbow Cuisine) 25 ml olive oil Salt and pepper
Method:
1.Prepare root vegetables and cut them into quarters or in sticks. 2.Mix Date & Tomato Chutney and olive oil. Season with salt and pepper. 3.Leave the vegetable to marinate for approx. half an hour before baking in a preheated oven at 200º C for about 40 min. or until done. Serving: Before serving, sprinkle with finely chopped parsley. Perfect with any kind of meat.
