Cape Chicken Curry
Cape Curry Sauce is a quick and very tasty way to make a traditional Cape Malay curry with fish, meat or poultry.
Ingredients:
(4 - 6 servings) 750 g filleted chicken breast 20 ml flour 4 ml curry powder 60 ml oil 2 large onions, sliced 250 ml Cape Curry Sauce (Rainbow Cuisine) Salt 50 ml coconut cream
Method:
1.Mix flour and curry. Lightly dust the chicken breasts with the flour mixture. (Chicken breasts can also be sliced into strips before coating) 2.Fry the chicken in oil until lightly browned. 3.Sauté the onions in oil until translucent. 4.Add the Cape Curry Sauce and chicken. Season with salt. Cook until the chicken is done. 5.Before serving add coconut cream. Serving: Garnish with coriander leaves and serve with rice.
